Say hello to my little friend!! It’s my petite loaf pan from Wilton. When I discovered this wonderful pan, I put my mini cupcake pans away and this is now my new go to tool to bake up some tasty, quick and easy protein packed, portion controlled main dish items. Since I cook for myself as well as my family, it has always been a challenge getting meals prepared that I can serve to everyone. I used to make meals two different ways, smaller portions for myself and then a family size portion. Since I’m pressed for time and I’m also always looking for ways to keep my budget under control, this petite loaf pan helps me with time, portion control as well as going easy on my budget. Now, I just make my recipes in one batch, fill the petite loaf pan, bake and presto, the main dish is ready!
Here are a few of my favorite go to main dish ideas using the Petite Loaf Pan
Mini Meatloaf
Ingredients
2 lbs lean ground beef, turkey or chicken
1 large egg
1 onion finely diced
2 cloves garlic finely diced
1 tsp. or quick dash of Worcestershire Sauce
1 tsp.garlic powder
1/2 package Lipton onion soup mix
1/2 c. panko bread crumbs (I had Progresso lemon&pepper in my pantry)
Mix all ingredients together. Spray Pan with cooking spray, fill loaves with meat mixture.
Bake at 350 degrees for 35-40 minutes
Petite Ricotta Loaf
Ingredients
2 large eggs
1/2 cup part skim ricotta cheese
1/2 c. low-fat cottage cheese – softened
1/2 c. parmesan cheese
1/2 c. Sargento Shredded Reduced Fat 4 Cheese Italian
1 tsp. Garlic Powder
1/4 c. Tomato Sauce (add more to taste)
1 tsp Dried Italian Herbs
Mix eggs, ricotta cheese, cream cheese, parmesan cheese, garlic powder, and Italian herbs together until a smooth cake batter consistency.
Spray pan with cooking spray, fill loaf pan with mixture. Then spoon on top of each loaf, tomato sauce, and top with shredded 4 cheese Italian.
Bake at 350 degrees for 30-45 minutes until golden and bubbly.
Ham, Egg & Cheese Loaf
Ingredients
5 large eggs
2 Scallions ( green onion) finely chopped
2 mini peppers finely chopped
1 c. diced ham ( I used left over baked ham from dinner)
1/2 c. parmesan cheese
Salt & Black Pepper to taste
Mix all ingredients together. Spray pan with cooking spray. Fill pan and bake at 350 degrees 30-45 min. until a rich golden color.
