What’s For Dinner? That’s the burning question on everyone’s mind! Whether you live alone or not, we are all asking ourselves this question at some point during the day! I was challenging myself to use the ingredients I have at home and then on my way home from work, I stopped into the supermarket and saw some wonderful Portobello mushrooms and I knew it would add a totally different dimension to my dish. So with 6 ingredients, this is what I came up with for what’s for dinner! It was my husband’s idea to have a pasta dish and since I don’t eat pasta that kicked my challenge up another notch. Of the ingredients I have at home, what one dish could I make for both of us to eat? So here’s what’s for dinner in my house!!
Ingredients
1/4 Package pasta (I used spaghetti but any pasta will do)
1 medium yellow onion finely chopped
4 cloves garlic minced
4 Canadian Bacon Rounds – julienned
4 Hard Boiled Eggs ( I ended up using only 3 eggs)
8 oz Portobello mushrooms sliced
- Place eggs in a saucepan cover with water, bring to a boil. I boiled my eggs 10-12 minutes. Run under cold water, peel, set aside
- In a medium pasta pot (5qt. size) fill 3/4 with salted water, bring to a boil, add pasta and cook following package directions. Drain and return pasta to the pot.
- In a saute pan, spray with cooking spray or lightly coat with vegetable oil/coconut oil( any oil of your choice) on a medium/high heat, add onion and saute until translucent
- Add garlic and cook 2-3 minutes
- Add Canadian Bacon and cook until warmed through 2-3 minutes
- Add the mixture from the saute pan into the pasta pot, stir until fully incorporated. Season to taste
- Place past mixture on plates and top with sliced eggs
Serves 2-3 people
