I really don’t remember the Month of February as so food oriented. Normally, we’re all motivated about our resolutions and goals this early in the New Year. But this year, it seems everywhere I turn, there are lots of tempting foods and it seems more than usual. I know we have Valentine’s Day coming up, but each day, there’s been some sort of snacks, donuts, cakes, Girl Scout cookies, and other sweet items brought into work. It’s really stressing me out to be quite honest. There are days when I feel totally overwhelmed by the number of snacks all around. How am I holding up through all of this? How am I staying on track? Believe me, it’s not easy, I am human after all! LOL, I used to partake in all of these food eating activities. In many ways, these foods bring people together for a chat, laugh, and fellowship. What I’ve been doing instead is get a cup of coffee, fill my water bottle up, chat and be sure to have my meals ready to go in Jaxx. I try not to linger or hang around the lunch room and where most of these tempting goodies are kept.
Today’s Meals were very simple, quick and easy.
- Premier Protein Chocolate Shake – 30 grams of protein, rich creamy chocolate flavor. What I find interesting is I’m a vanilla ice cream and shake person. But when it comes to protein shakes, I tend to lean towards Chocolate, Caramel, and Cookies and Cream, more than Vanilla.
- For my next meal, I had Fage 0% Plain Greek Yogurt with blueberries. I wanted you to see how this yogurt looks when you peel back the lid. There is a parchment paper covering the yogurt inside the container. How awesome is that! When you pull back the parchment paper, it reveals a thick, densely packed yogurt. It’s easy to scoop out in one piece which is a fun thing for me to do. Don’t ask me why, I just like to see if I can get this yogurt out of the container in one, compact shape. Most of the time, the yogurt cooperates. The parchment paper is very wet so it soaks up any additional moisture while packaged. I’m thrilled with this yogurt and when you use it, you’ll be able to see the difference in this particular brand and the others.
- In the red ramekin, I baked some ricotta cheese. This really gives you sort of a crustless pizza or noodle-less lasagna taste. I’ll share the recipe on my recipes page.
- In the container, I had another portion of leftover chicken meatball lasagna. I made a batch of my famous chicken meatballs and decided to slice them up to create layers instead of lasagna noodles. The end result is a creamy, filling, delicious meal that’s sinfully delicious! I’ll also add this to my recipes page. I need to get out the ingredients and set up the instructions on how to make this dish. It’s so easy to make.
