Mediterranean Inspired Lunch stores well in my Jaxx Meal Container!

I especially enjoy having salads during the hot and humid days of summer. Eating salads or some sort of vegetable combination is a regular staple of my diet. Truth be told, before my weight loss, I regularly ate veggies and salads. I just destroyed their health benefits by adding creamy salad dressings or other high calorie add -ins. When I put my veggies on a diet, I learned that vegetables taste great on their own, without covering up their unique, natural flavors.

I’ve been experimenting with different flavors and trying to lighten up some of my favorite things by re-structuring the original recipes. I’ ve always been drawn to the flavors of Mediterranean food. It’s easy to see why this type of diet is good for our heart and overall health. This way of eating is packed with low fat, fresh herbs, good oils, healthy carbohydrates, good proteins, etc. In this salad, I added falafel bites that I made from a mix I found in Trader Joe’s . I’ve always enjoyed falafel,  but didn’t want to fry them, as they are traditionally served.  So baked this mix following the package directions, in the oven. They were absolutely amazing! The flavors, texture, and consistency were fantastic. This mix is gluten-free, vegan and also loaded with protein from the blend of ground lava beans and chickpeas. The box will make a few batches. I followed the package directions which made 12 solid falafel bites. I used 2 falafel bites for this salad as part of my protein and carbohydrate. Since these freeze well, placed the rest in a freezer bag to enjoy later, just pop them in the toaster oven or microwave to warm through.

With my the falafel bites baked and ready to pack up, it was time to build the rest of my Mediterranean inspired lunch. At Trader Joe’s, I bought a package of wild arugula, baby cucumbers, mini bell peppers and baby carrots. I washed all the veggies, placed them in my Kitchen Aid salad spinner and placed them in the main compartment. In the third compartment, I added some reduced crumbled fat feta cheese and that’s it! Salad ready to heat up, and mix up! Super quick, easy, healthy and filling!

I’ll include the nutrition information for the falafel mix with water since that’s how I made it and also baked the mix without using any oil. I simply coated a cooking spray.
