There’s nothing like home cooking, right? Or at least in my opinion! This seasoning mixture has been a game changer in the way I prepare my meals. It’s basically a combination of fresh herbs, vegetables and spices, which is so easy to prepare that I make a big batch and store it in the refrigerator for up to two months or until I use it all, which ever comes first! Since this is a wet seasoning, I do use it as a marinate and also incorporate it into brine liquids that I use for whole turkey and chicken. I have played around with the recipe many times by adding other things, but the base of the recipe always stays the same. One of the best ways I enjoy using this seasoning is when I purchase my chicken, beef or pork in bulk packages, I wash everything and season it up and then make smaller packages which I freeze to use at a later time. The flavors have time to really blend together giving you a wonderful, flavorful, protein, without using oil, artificial ingredients and calories. You can make this seasoning a chunky style or smoother consistency by adjusting the amount of water and time you blend the ingredients.

My Sister’s Green Seasoning

1 Bell Pepper ( your favorite color will do)
2 Bunches of Green Onion (Scallion)
4 Onions (preferably white or yellow)
2 Heads of Garlic
1 Bunch of Parsley
3-4 Sprigs of Cilantro – preferably the long blade or regular cilantro will do – just 1-2 Sprigs

1.5 Liter Mason Jar – this recipe fills one Mason Jar

Optional Ingredients:

fresh ginger, rosemary, thyme ( try any of your favorite fresh herbs)

  • Cut the pepper, remove the seeds and slice into strips.
  • Cut the pepper, remove the seeds and slice into strips.
  • Cut the stems of the green onion removing the roots, clean and cut in half.
  • Peel and cut the onions in quarters.
  • Separate the garlic cloves and peel.
  • Cut the parsley removing any roots or soil. Rough chop the cilantro.
  • Place all ingredients in a colander and wash thoroughly.
  • I started with the peppers and 1/2 cup of water, blend using the pulse setting until ingredients are finely chopped.
  • Add the garlic cloves, pulse until finely chopped.
  • Add the Cilantro, pulse until finely chopped.
  • Add half of the Scallions and pulse until finely chopped, then repeat with the other half of the Scallions until finely chopped.
  • Remove ingredients to a large bowl.
  • Add half of the Onions and pulse until finely chopped. I added 1/4 cup of water to create a smooth consistency.
  • Add to the bowl with the other ingredients and mix until well blended.
  • Add 2 tsp Kosher Salt (optional)
  • Spoon into Mason jar using a soup ladle.
  • I prefer a smooth consistency but slightly chunky style, so it’s up to you on what consistency you like best.
