On a recent trip to NJ, I was introduced to Flap Jacked Protein Pancake and Baking Mix. I am always looking for new protein packed products. I was amazed with this Pancake Mix and for my first few tries, I followed the package directions.
Package Directions For Pancakes
Whisk 1/2 cup mix ( 1 serving) with 1/3 cup cold water until well blended. Let sit for 3 minutes.
Heat griddle (I used a 10″ fry pan) to low heat (285-295F)
Pour batter into 3-4 inch pancakes on lightly greased, (I used cooking spray instead of oil) pre-heated griddle.
Cook until no more bubbles are forming in the center and edges look dry ( about 3 minutes). Flip and cook until golden brown
These Pancakes Were AWESOME!! I added Carey’s Sugar Free Syrup which I use in a number of different ways.
One thing I did the second time I made these pancakes was add a little more water. The package also suggested that for thinner pancakes add 1-2 tablespoons of water until a desired consistency is reached. I added 1/4 cup of water and the pancakes were just the consistency I like.
The package all suggests other flavorful mix-ins to the batter such as chocolate chips, fruit or nuts and cook as directed. Basically, any way you like your pancakes is the same way you prepare them using this mix.
They also have other suggestions on how to add more protein such as replacing the water with fat free milk or replacing the water and adding one egg plus 1 tablespoon of water. I haven’t tried these variations but will be trying them out in the near future.
I did make these for my husband and added sliced banana and syrup to his serving. He really loved the pancakes and he noticed they kept him feeling fuller much longer that regular pancakes!
I have added the Flap Jacked Baking Mix to My Favorites so you can purchase them here. The mix is not readily available everywhere as I’ve tried to find it near where I live and wasn’t able to find it in stores.
This company also makes Flap Jacked Mighty Muffins which is a protein packed muffin you make in the microwave! These muffins taste fantastic!! They are a real treat!
