Bacon, did someone say Bacon? I am one who believes just about anything tastes better when you add a little bacon. But when you are trying to eat healthier and watch your weight, bacon usually isn’t on the menu. So when my good friend Wendi told me how great Applegate Naturals Uncured Turkey Bacon is, I didn’t hesitate to go out and pick up a couple of packages to try. Here are recipes with applegate naturals uncured turkey bacon.
One of the first meals I decided to try was a classic dish – bacon and scrambled eggs. Just after my first try, I will tell you that Applegate Naturals Uncured Turkey Bacon is a total game changer for me! I am so excited to get into the kitchen to test it out in some more of my recipes. The package contained 7 slices and we ate 6 slices, so with the extra slice I also created an amazing Turkey Bacon Wrap for lunch and will post the recipe next.
Turkey Bacon and Eggs
Ingredients
1 Package Applegate Naturals Uncured Turkey Bacon
4 Large Eggs Beaten
1 Stalk Green Onion – Green and White part separated and finely chopped
Cooking Spray
Dash of Grated Nutmeg (optional)
Hot Pepper (optional)
Salt & Pepper to Taste
Instructions
In a medium skillet, pan fry the turkey bacon on medium heat until desired crispiness is achieved, 2-4 minutes per slice, remove to plate.
In bowl, wisk eggs until well blended, add salt, pepper, nutmeg
Spray skillet with cooking spray
Add the white part of the scallion to the skillet and cook 1-2 minutes
Add scrambled egg mixture turn pan so the bottom of the skillet is completely covered with the liquid egg mixture
With a spatula, pull egg mixture to the center of the pan and turn the skillet to cover the bottom of the skillet with more liquid egg mixture. Repeat until all of the liquid egg mixture becomes fluffy and cooked through.
Serve eggs with 2-3 slices of bacon.
