Why Is This The Quickest Chopped Salad Recipe Ever? Because it took longer to buy the ingredients than to put this amazing, yet very simple salad together.

Salad and mixing vegetables and greens together is something I usually serve in my house. I don’t know about you, but my family says they get bored with salad. I normally like to serve it with our dinnertime meal since I know it’s probably the best chance I have to get some nutritious vegetables and greens into their stomach.  So, to try to keep the boredom at bay, I’m always on a quest for a new take on an old, classic, garden salad.  I have to say, I am blessed because my family enjoys raw vegetables. That makes it so much easier to whip up my salad creations since I have the freedom to mix different veggies and greens together.

For this salad, I used Fresh Attitude Arugula, Radishes roughly chopped, 1 Cucumber diced, Baby Carrots, cut into bite size pieces, and Pero Family Farms Baby Bell Peppers.  It’s just that simple! Once everything is chopped and washed, I placed all of the ingredients in a salad spinner to remove as much of the excess water as possible. Then, I’m ready to serve. I like to make a big batch and use this salad for 2 days. I add different toppings such as black olives or sliced red onion. This way, I’ve saved some time by doing the prep work ahead and also, it keeps the salad interesting by adding some variations to the base recipe. I try not to get carried away with the toppings because if you are not careful, that’s where the calorie count of a friendly salad can really add up. This salad has a nice balance of flavors, sweet from the baby peppers and carrots, a sharp bite from the arugula , a spicy kick from the radish, and a mild, cool flavor from the cucumber. What I like about adding the cucumber to this recipe is it can cool things down just in case the radishes are a little spicier than expected.
