Jaxx was filled with some AMAZING selections today! I had a Protein Chia Seed Overnight pudding, zucchini lasagna (enough for two mini meals), Fage Greek Yogurt with fresh Blueberries and a Premier Chocolate Protein Shake.

So my meal line up was a mixture of all sorts of interesting things.

Premier Protein Chocolate Shake – 30 grams of creamy, chocolatey goodness. It’s really hard to believe this shake is actually good for me! LOL

Fage Total 0%Plain Greek yogurt is a go-to for me! I routinely have it with blueberries, strawberries, or some almonds. So, today, I mixed up the yogurt with blueberries, added a package of Stevia and it’s all kinds of delicious!

I created lasagna with zucchini as “noodles” instead of pasta. Since lasagna isn’t a big favorite in my house, I wanted to find a lighter version of this dish that I would be able to enjoy. So, this lasagna was made with grilled zucchini slices that I sliced with a mandoline then layered the zucchini slices with tomato sauce, ricotta, mozzarella, parmesan and asiago cheeses. Place the lasagna in the oven and bake until the cheeses are all melted and bubbly.  I’ll put the recipe in the recipe category tomorrow.

In the container next to the zucchini lasagna is an Overnight Chia Seed Protein Pudding! I purchased a package of Chia Seeds( Nature’s Intent Organic Chia Seeds) to experiment with and decided to use them instead of oatmeal to create this overnight pudding.  What are Chia Seeds? I’ve learned these seeds are packed with lots of nutritional value, high fiber, protein, offer omega – 3’s and no sugar. I really enjoyed the crunchiness from the chia seeds along with the creaminess of the other ingredients. This is so simple to put together. Here’s the recipe in case you are curious to give this a shot

Overnight Chia Seed Protein Pudding

1 scoop vanilla protein powder ( unflavored powder works well also)

1 Tablespoon Chia Seeds

1/2 cup almond or soy milk ( I used unsweetened vanilla almond milk)

Place all ingredients in a plastic container, mix well, cover and refrigerate overnight. That’s It!

In the morning remove it from the refrigerator, add fruit, stevia, Cary’s sugar-free maple syrup, nuts or any of the favorite mix-ins you would normally add to your oatmeal. Enjoy!
