Cottage Cheese Pancakes
Light, Fluffy, and Packed with Protein
Ingredients
- 1/2 Tsp Baking Powder
- 1/3 Cup All Purpose Flour can substitute with whole wheat flour
- 3 Large Eggs beat lightly
- 1 Cup Low-Fat Cottage Cheese I used Daisy Brand
- 1/2 Tsp Canola Oil Can substitute Avocado, or Coconut Oil
- 1/4 Tsp Ground Nutmeg Optional
- 1/4 Tsp Cinnamon Optional
- 1/2 Tsp Pure Vanilla Extract Optional
Instructions
- In a small bowl, combine baking soda and flour
- In a large bowl, combine remaining ingredients
- To the cottage cheese mixture, pour the flour mixture and stir just until all ingredients are well combined. Take care not to over mix
- Spray a large skillet with cooking spray and heat to medium temperature
- Pour 1/3 cup portions of batter onto skillet
- When bubbles appear on the surface of the pancake, flip over and cook on the other side until golden brown
- Remove to a warm plate
- Serve with sugar-free syrup, fresh fruit, or other low-calorie toppings of our choice
- Enjoy!

Try them in a savory version by adding green onion and vegetables.
