Ingredients
  

  • 1/2 Tsp Baking Powder
  • 1/3 Cup All Purpose Flour can substitute with whole wheat flour
  • 3 Large Eggs beat lightly
  • 1 Cup Low-Fat Cottage Cheese I used Daisy Brand
  • 1/2 Tsp Canola Oil Can substitute Avocado, or Coconut Oil
  • 1/4 Tsp Ground Nutmeg Optional
  • 1/4 Tsp Cinnamon Optional
  • 1/2 Tsp Pure Vanilla Extract Optional

Instructions
 

  • In a small bowl, combine baking soda and flour
  • In a large bowl, combine remaining ingredients
  • To the cottage cheese mixture, pour the flour mixture and stir just until all ingredients are well combined. Take care not to over mix
  • Spray a large skillet with cooking spray and heat to medium temperature
  • Pour 1/3 cup portions of batter onto skillet
  • When bubbles appear on the surface of the pancake, flip over and cook on the other side until golden brown
  • Remove to a warm plate
  • Serve with sugar-free syrup, fresh fruit, or other low-calorie toppings of our choice
  • Enjoy!

Notes

 Try them in a savory version by adding green onion and vegetables.
