Mexican Seven Layer Dip Cups

Here's a healthy and adorable way to serve this Mexican Seven Layer Dip Cups

Equipment

  • Plastic Clear Footed Cups to create individual servings ( 9 oz. plastic water glasses) from Dollar Tree

Ingredients
  

  • 1 can fat free refried beans I added garlic powder to the refried beans
  • 1/2 container low fat sour cream can sub with plain greek yogurt
  • 1 jar salsa you will only need a little bit, any brand, mild, medium or hot
  • 2 ounces 2% shredded mexican blend cheese any shredded cheese will work
  • 1 tbsp sliced black olives
  • 1/4 package shredded lettuce
  • 1 stalk green onion use only the green part
  • 5 9oz. plastic water glasses from Dollar Tree
  • 1 bag organic yellow corn tortilla strips I used Whole Foods Brand

Instructions
 

  • In the botton of each glass, put 2 tablespoons of refried beans and make a smooth layer
  • On top of the refried beans, put 2 tablespoons of sour cream and make a smooth layer
  • On top of the sour cream, gently put 2 teaspoons of salsa and make a smooth layer
  • On top of the sour cream, with your finders, gently arrange a thin layer of lettuce
  • Top the lettuce with a few sliced olives
  • To the olives, add some slices of green onion
  • Garnish each cup with tortilla strips and place the remaining tortilla ships in a bowl for dipping
  • Enjoy

Notes

I added garlic powder to the refried beans and sometimes add cayenne for a little kick of heat. I've also added taco or fajita mix to the refried beans for a bolder flavor. Other options to try are adding guacamole, jalapeño or bell peppers instead of the olives. As with any recipe, the options are up to your taste and creativity.
