Buffalo Chicken Meatball BURGERS?

I turned this Buffalo Chicken Meatballs into Chicken Burgers. FAMILY APPROVED!

Equipment

  • Cutting Board
  • Chef Knife
  • Large Bowl to mix all ingredients
  • Small Bowl to whisk eggs
  • Cast Iron Skillet
  • Oven Mitts

Ingredients
  

  • 1 lb Ground Chicken I used Bell and Evan Brand
  • 1 Large Egg Beaten
  • 2 Stalks Scallions Finely chopped
  • 1 Stalk Celery diced small
  • 1 Tbsp Mayonaise I used Hellman's Light Brand
  • 1 Tbsp Coconut Flour I used Red Mill Brand
  • 1 Clove Garlic Minced
  • 1/2 Small Onion diced small
  • 1 Tsp Kosher Salt
  • 1 Tsp Ground Black Pepper
  • 2 Tbsp Avocado Oil
  • 1 Tsp Buffalo Sauce optional
  • 4 Medium Hamburger Buns optional

Instructions
 

  • Preheat oven to 400 degrees
  • In a large bowl, add ground chicken, egg, scallion, garlic, onion, celery, mayo, salt, pepper, and coconut flour
  • Mix together and form 4 oz. patties.
  • Add Avocado Oil to a cast iron skillet until warm
  • Place chicken patties in skillet and with a spatula, pat the patties to slightly flatten
  • Brown Patties on each side for 3-4 minutes until golden brown
  • With Oven Mitts on, carefully remove the skillet from the stove top to the oven
  • Bake for 15 - 20 minutes until internal temperature reaches 165 degrees
  • Remove from oven and serve

Notes

You can add any of your favorite toppings, remove the buffalo sauce and add other condiments to your liking.
I didn't use the hamburger bun for my burger, but to serve this to my family, I used Whole Wheat Hamburger buns.

This is one of the BIGGEST challenges I face with my family. So how do I deal with it? I explore recipes that work for my pickiest of eaters and then I play around with various ways to cook and build meals.

This recipe was adapted from Chef Robert Irvine’s Buffalo Chicken Meatball recipe, but I wanted to see if it would work as a burger and BOOM! This recipe produced an amazing ground chicken burger that was tasty and LOADED with flavor.
