Ingredients
  

  • 1 lb Ground Chicken I used Bell & Evens Brand Dark Meat
  • 1 Large Onion Diced Small
  • 4 Cloves Garlic Minced
  • 1 Large Green Bell Pepper Minced
  • 1 16 oz. Can of Red Kidney Beans Rinse and Drain
  • 1 24 oz. Jar of 4 Cheese Tomato Sauce I used Marinara Sauce as that's what I had on hand
  • 1 10 oz. Can Diced Tomatoes with green chilies include the liquid
  • 1 Tbsp. Chili Powder
  • 1 Tsp. Cayenne Pepper Adjust this up or down to your liking
  • 1 Tsp. Garlic Powder
  • 1 Tsp Ground Black Pepper
  • 2 Tbsp. Olive Oil Enough to Coat pan to saute chicken and onion

Instructions
 

  • In a chicken fryer pan, coat the pan with enough olive oil and brown the chicken over high heat.
  • Continue to crumble the chicken until it is no longer pink.
  • Transfer to a bowl
  • In the same pan, add a little more olive oil and saute the onion and peppers until onion is golden.
  • Add Garlic and saute until soft
  • Reduce heat and add chicken, can of diced tomatoes, jar of tomato sauce, drained kidney beans. Stir to incorporate all ingredients and bring to a boil.
  • Add chili powder, cayenne pepper, garlic powder, sale and pepper. Stir to mix well.
  • Reduce heat to low and simmer 15 minutes stirring occasionally.
  • Enjoy!

Notes

  • If you prefer to make this recipe all in one dish, I recommend using a chicken fryer pan. I used a 10 inch pan for this recipe and it was deep enough to easily fit all of the ingredients.
  • When it comes to using ground chicken, you have a variety of options. I used Bell & Evans Brand, Organic, Dark Meat which added a lot of flavor and less fat than traditional ground beef. If you prefer to use a leaner meat, look for ground chicken breast.
  • When I originally made this recipe, I used 4 -Cheese Tomato Sauce, but this time around, I only had Marinara Sauce.
  • Serve with your favorite Mexican Toppings (avocado, sour cream, cheese, etc.), a hearty salad, and/ or rice.
