Notes

This recipe makes about six, 4" Pancakes as mentioned on the box directions.
I added Vital Proteins Collagen Peptides for an additional boost of protein as well as the collagen.
As recommended by the manufacturer, for the best results, so once you mix the batter,  use it right away.
I added Carey's Sugar-free Maple Syrup. This is BY FAR, the BEST sugar free syrup on the market. It has that wonderful, smokey maple flavor we all love so much from syrup. Try it and you'll see for yourself.
The fun part of pancakes is the toppings. Just be mindful as to what you are adding and chose healthier options such as fresh fruit, plain greek yogurt with stevia or other low-calorie options.

Pancakes take me back to my childhood when my brothers and sisters and I looked forward to this special meal that was reserved for the weekends. Fast forward to today, with the invention of “Breakfast for Dinner” and pancakes have a place at the table as a weekday, evening meal.

I always remember pancakes being so delicious, but made me feel puffy and bloated. This is one of the reasons I’ve kept my distance from including them more regularly into my meal plan. The other main reason for omitting them from my diet has been due to the high carbohydrate and calorie load. The pancakes of my childhood were not exactly “healthy.”

What makes these pancakes POWERFUL? You guessed it, the added protein punch! If you notice, to the Kodiak Power Cakes Flapjack Mix (affiliate link), I added a protein powder by Vital Proteins (affiliate link). It’s a Collagen Peptide Powder that’s Unflavored.  Adding a scoop of this powder into the mix doesn’t change the texture or flavor of the pancakes. I recently added collagen to my supplement routine, since I am familiar with it’s benefits as an ingredient in my skincare products.

What is Collagen?

Basically speaking,  the most prominent protein found in the body, namely skin, hair, nails, bones, and muscles. Check out this link from Medical News Today breaking down all the details on the important role collagen plays.

 What is collagen good for?

I use collagen to improve the elasticity and appearance of my skin, nails and to help ease my symptoms associated with arthritis. As we age, our collagen production decreases, so adding a supplement can be a great way to keep collagen levels in your body more stable. I’ve included a link to an article from WebMD explaining what you should know about it.

Enjoy this recipe with your usual healthy toppings such as fresh fruit, a little whipped cream doesn’t hurt either. I enjoy using Carey’s Sugar-Free Syrup (affiliate link). If you are not familiar with it, I recommend giving it a try! It’s amazing and really has a wonderful taste similar to Maple Syrup.
