Power Protein Pancakes
Are you a pancake lover? Do you think eating pancakes will derail your weight loss and health goals?If so, read on as I'm happy to report, you CAN have your pancakes at eat them too! It's Possible to have these pancakes while staying on your eating plan and achieve your weight loss goals.
Equipment
- 8 or 9 "skillet
- Large bowl to mix pancake batter
- Measuring cup
Ingredients
- 1 cup Kodiak Cakes Power Cakes Buttermilk Flapjack Mix
- 1 scoop Vital Protein Collagen Peptides Powder optional
- 1 large Egg I used Organic Brown Eggs from Aldi
- 1 cup cold water
- 1 spray Avocado Oil Spray can substitute with cooking spray of your choice
- 2 tbsp Carey's Sugar Free Maple Syrup Optional
Instructions
- In a large bowl add pancake mix and vital protein collagen powder
- Whisk or blend dry ingredients together
- Add water and mix until smooth
- Add egg and mix until smooth
- Spray skillet with cooking spray
- Heat skillet on medium
- Pour 1/4 cup of batter into the skillet and when bubbles form in the center of the pancake which generally takes 1- 1/12 minutes, turn it over cook for 30-60 seconds, until golden brown.
- Top with syrup or your favorite pancake toppings.
- Enjoy!
Notes
This recipe makes about six, 4" Pancakes as mentioned on the box directions.
I added Vital Proteins Collagen Peptides for an additional boost of protein as well as the collagen.
As recommended by the manufacturer, for the best results, so once you mix the batter, use it right away.
I added Carey's Sugar-free Maple Syrup. This is BY FAR, the BEST sugar free syrup on the market. It has that wonderful, smokey maple flavor we all love so much from syrup. Try it and you'll see for yourself.
The fun part of pancakes is the toppings. Just be mindful as to what you are adding and chose healthier options such as fresh fruit, plain greek yogurt with stevia or other low-calorie options.
